This J.A. Henckels International Classic 8-Inch Stainless-Steel Chef's Knife has a higher quality handle which is comfortable to use, and is of the reputable brand Henckels. The blade is very sharp, which is actually safer for cooking as you are less likely to hurt yourself. The knife is also lightweight, and fits easily into my knife block.

I've owned one of these 8" chef's knifes for about 9 or 10 years. I recently purchased another one as a present for a relative. I've had excellent service from this knife. It holds a good edge, is easy to sharpen when needed and balances well in my hand.

It's edge is sharp as a scalpel and its balance feels good in the hand. A tribute to German engineering. For the chefs knives, these are wonderful tools that I believe come very close in quality and effectiveness to knives costing more than twice as much. PLUSSES
  • I'm pleased with the weight because it adds to the ease in chopping, so I don't need to apply so much pressure to each chop.
  • The long handle balances the scale, meaning it helps me maintain proper grip on the knife, so it is easier to use and feels right in my grasp.
  • As a visual artist and home cook, I appreciate the fact that the knife is hot drop forged, making the blade stable and prevents it from breaking off or coming out at the joint with the handle.
  • Safety in cutting is important to me and both the slant of the blade from top to bottom (horizontally) and the nice hefty handle help me avoid slicing into my fingers or nails like I sometimes did with the chef's knife I retired.
  • Handle design includes finger grips, especially at the end, and that keeps my hand firmly on the handle.
  • Sharp out of the box so I haven't needed to sharpen it yet, but I understand it holds sharpness for a very long time.

I'm completely satisfied with this Henckels 8" Knife and will recommend it and give it as a gift. I don't know why anyone would spend more on a knife, unless they were looking for a status symbol rather than a useful tool.

The chef's knife is perfectly weighted toward the blade for efficient chopping, especially if you use the chef's technique of lifting the base of the blade but not the tip. The arc of the curve falls more toward the middle of the blade than it does on my other brands of chef knives, creating more of a rocking motion than a straight up-and-down.
