Shun Edo BB1503 8-1/2-Inch Chef's Knife Nice and very sharp and holds an
edge well. Great looking knife as well, a real pleasure to hold as most
Shun knives are. It's actually much larger in my hand than I expected, it's also very heavy for a chef knife, much heavier than any of my
Wusthofs, or Macs.

This knife is very well balanced. It feels very comfortable and it is VERY sharp. And I think I will find myself reaching for it a lot when I go to cut stuff up in the kitchen. If I'm chopping small or soft vegetables (like peppers, tomatoes, herbs, etc) or slicing meat, then I think this knife is right at or near the very top of the list, because at that this knife is AMAZING.
Best knife ever! I have been dreaming of this
knife for fifteen years! Perfect in every way. Love the smooth
ergonomic grip on the bolster. No more crazy knife callus. Super
sharp. Great feel. Balanced. Beautiful to the eye. A work of art.
