If you've read about Shun knives, you know they are sharpened at 16 degrees on each side, which is an angle significantly more acute than any Western knife. However, these particular knives with the scalloped edges are unique in that they are only sharpened on one side! This means they are TWICE as sharp as a typical Shun knife because the bevel is limited to one side.
